Preparation: Once our pure, acorn-fed P.D.O. Dehesa de Extremadura Iberian Shoulder ham is selected and it has been verified that the product is in optimal condition to be boned, our expert ham artisans boneless it by hand vacuum-pack it.

The boneless piece loses around 53% of its weight after the bone and skin have been removed.
