WE HAVE VERY GOOD REASONS... |
The race of our porks is 100% pure,
working with different varieties that are the lampiño and torbiscal. (The
following information is the one that makes us be so exclusive).
Only 5 % of the total, is porks of pure Iberian race between which there are
Hams Monsalud.

In
the wooded pastures of oaks and blockheads of the provinces of Caceres and
Badajoz they grow up and fatten the pork destined to provide the hams and
shoulder hams "Dehesa de Extremadura".
Our Pastures include 57 % of the
total of Pastures of Spain.

The
European Union recognized in June, 1996 to "Dehesa de Extremadura" as
Protected Designation of Origin (DOP) supporting of this form at the
Community level the prestige and the quality of the Iberian Hams and Iberian
Shoulder Hams received by the Regulatory Advice. |
The hams Monsalud are
cured in Montanchez, capital of the ham of Extremadura, placed in the north
hillside of Montanchez´s saw (998 mts. of altitude). |
In a Montanchez´s gastronomy it is
necessary to emphasize "Iberian Pure Acorn Ham" of recognized and excellent
quality (served already in the court of the King Philip IV in the 17th
Century). |
Our master hams elaborate Acorn Pure Iberian
Ham with an individualized treatment. Every piece receives the only
supervision, from the baby of the Iberian pork up to his treatment in. |

Our products are exclusive for:
Production:
The annual production is 3.500 pork of Iberian race.
Elaboration:
Our Drying Shed and Storehouse is a handcrafted, alone
human treatment, without machines that the care.
Transformation:
The whole sliced of our pieces they are done to
hand, to knife, for a equipment with more than 25 years of experience.
Distribution:
Our products only can be acquired in establishments
of the maximun level where they treat to our product with the care that he
needs.
